Blueberry Pie!

Fresh Blueberries from Echo Springs Blueberry Farm
I have some blueberries left over after using all I needed to make 6 gallons of blueberry wine. So, I decided to make a blueberry pie.

Mixed Ingredients in a Mixing Bowl
First I washed and drained the fresh blueberries which measured about 4 cups. I added them to a mixing bowl. To the blueberries I added 1 cup of sugar, 2/3 cup of all-purpose flour, ½ teaspoon of finely shredded lemon peel, dash of salt, and 2 teaspoons of lemon juice.
Pour blueberries into a homemade pie crust The Texas Pioneer Woman Homemade Pie Crust. Dot blueberries with 2 tablespoons of butter or margarine.

My pastry strips are different sizes. Oh well. It definetly looks homemade!
Roll out pastry and cut into strips. Place pastry strips on top of blueberries and weave across top of pie. Flute to the sides of the pie dish cutting off pastry at the edge of the pie pan.

Oops! I forgot to add the butter before adding the pastry strips! That's okay. I added them between the pastry stips.
Cover edge of pie with foil and place on foil covered baking sheet. Bake in a 375°F oven for 25 minutes. Remove foil and bake for 30 minutes more or until crust is golden.
